Menu – Feb 28

Here’s my menu for the week.  I meant to post it on Friday when I figured it out, but the day (and then weekend got away from me).  After this week, I’m resolved to picking recipes that will help me clean out the freezer before spring sets in.  I’m going to feel a bit ridiculous for freezing cauliflower when there’s fresh local cauliflower to be had at the market.


Saturday – Roast beef salad (left over from last week)

Sunday – Lemon Roast chicken with carrots and tomatoes

Monday – gardener’s pie (sort of like hamburger pie but with tofu), Canadian Living p105

Tuesday – Chicken flat bread (like pizza, but w/ very little cheese)  with apple & fennel salad

Wednesday – Wheat berry & lentil salad with baked tomatoes

Thursday – Cabbage Rolls (from freezer) and brocolli

Friday – Roast vegetable & chickpea potjie, Bonnie Strearn Friday Night Dinners
